Spinach & Cheese Casserole

This delightfully delicious spinach and cheese casserole recipe is filled with wholesome ingredients and is very easy to bake. Hope you try it too!  Happy cooking! 

Ingredients

  • 5 ounces chopped spinach
  • 2 eggs 
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 1 cup milk
  • 1/2 cup shredded mozzarella or Monterey Jack cheese
  • 1/2 cup crumbled feta or cottage cheese

Baking Steps
  • Preheat the oven to 375 degrees.
  • In a small bowl, beat the eggs. 
  • In a large bowl, sift together the flour, baking power and salt. 
  • Blend in the milk, eggs, and olive oil.
  • Then fold in the cheese and chopped spinach.
  • Poor the mixture into a 7" x 10" casserole dish.
  • Bake for 60 minutes until the top is golden.
