Spinach & Cheese Casserole
Ingredients
- 5 ounces chopped spinach
- 2 eggs
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/4 cup olive oil
- 1 cup milk
- 1/2 cup shredded mozzarella or Monterey Jack cheese
- 1/2 cup crumbled feta or cottage cheese
Baking Steps
- Preheat the oven to 375 degrees.
- In a small bowl, beat the eggs.
- In a large bowl, sift together the flour, baking power and salt.
- Blend in the milk, eggs, and olive oil.
- Then fold in the cheese and chopped spinach.
- Poor the mixture into a 7" x 10" casserole dish.
- Bake for 60 minutes until the top is golden.
