Mushroom & Spinach Orzo with Feta
Now that the autumn chill is in the air, it's nice to make cozy meals that warm the heart and the hearth. But when you don't have a lot of time to spend in the kitchen, this very simple six-ingredient pasta dish is the perfect solution for making a homemade healthy meal from fresh ingredient within fifteen minutes!
Ingredients
- 8 ounce package of spinach
- 8 ounce package of mushrooms
- 2 cups orzo pasta
- 2 tablespoons olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup grated parmesan cheese
Cooking Steps
- Cook 2 cups orzo pasta, per package instructions, and drain.
- Wash and slice the spinach.
- Wash and slice the mushrooms.
- In a large saucepan, sauté the mushrooms in olive oil over medium heat for about 2-3 minutes until the mushrooms have softened. Then add the spinach to the mushrooms and sauté for one more minute until the spinach has wilted.
- Combine the spinach, mushrooms, and feta with the orzo.
- Poor into bowls and top with parmesan cheese. Makes up to 4 servings.
