Tortellini Soup
A warm bowl of soup is a perfect meal on a cold winter day. I love making this tortellini soup because it is a simple recipe with five main ingredients, but it can be embellished with additional ingredients from your kitchen pantry, to make it your own savory style soup.
Main Ingredients
- 24 ounce jar of pasta sauce
- 10 - 12 ounces of water
- 10 ounce package of tortellini (or you can use ravioli)
- 8 ounce package of mushrooms
- 6 ounce package of spinach
Optional Ingredients
- Parmesan cheese
- Additional vegetables of your choice, such as corn or beans
- Cooked meats such as Italian sausage
Cooking Steps
- Wash the vegetables.
- Slice the mushrooms.
- Add the pasta sauce, tortellini and mushrooms to a large stock pot or Dutch oven.
- Add water ~ you can adjust the thickness of the soup by adding more or less water.
- Stir and simmer over medium heat for 5 to 10 minutes or until the pasta and mushrooms are cooked.
- Stir in the spinach for 1 to 2 minutes until it shrinks into the soup.
- Ladle the soup into serving bowls and top with parmesan cheese.
